Recipe: Prep time: 10 minutes Cook time: 0min Makes approx. 2 cups Beans (white, romano or black) drained and rinced -1 x 19oz can Canola oil - 3 tbsp Lemon or lime juice - 1-2 tbsp Each salt and pepper - 1 tsp Finely chopped onion - 2 tbsp OR garlic, finely minced - 1 clove 1. Puree (or mash) beans with oil, lemon/lime juice, salt and pepper. You can use a food processor (or just a fork). 2. Mix in onions (or garlic). 3. Enjoy with vegetable crudités, whole grain crackers or tortilla pieces. TIP: Pulses, such as beans, chickpeas and lentils, are great alternatives to meat and excellent sources of fibre, protein and folic acid!
