#EOHUeats - Easy Stovetop Broccoli Mac and Cheese
Prep time: 10 minutes Cook time: 20 min Serves 4
Whole grain macaroni (or any whole grain, bite-size pasta) 1 cup dry
Broccoli, chopped 1 1/2 cups
Butter ¼ cup
flour ¼ cup
salt ½ tsp
pepper ½ tsp
Milk 2 cups
Cheddar Cheese, shredded 2 cups
1. Cook pasta as per package directions. With about 5 minutes left to cook pasta, add broccoli and let cook for 5 minutes
2. In a medium saucepan over medium heat, melt butter and stir in flour, salt and pepper. This is called a ROUX and this will thicken the sauce.
3. Slowly add milk, stirring continuously. Cook and stir until boiling.
4. Stir in cheese until melted.
5. Drain Macaroni and broccoli and stir in cheese sauce. Serve immediately.
TIP: When planning meals, try to include foods from 3- 4 different food groups.
